Growing in backyards, parks, and hiking trails, the Northwest is bursting with them. These juicy berries are definitely worth the fight with the prickly bushes they grow on!<\/p>\n<p>Not only are blackberries delicious, they\u2019re good for you too! With one of the highest levels of antioxidants of any fruit- these berries are also a wonderful source of vitamin C and fiber. I visited their farms a few years ago and got to try a blackberry unlike anything I\u2019ve ever had before. They were HUGE and super sweet. They were a variety that you can randomly find during the season. I now look for these whenever I can \uf04a<\/p>\n<p>So, whether you pick them or buy them- to me, blackberries really are a taste summer. And they\u2019re the perfect addition to a refreshing summer cocktail! Muddle a few berries in a shaker tin with some fresh mint, 3\/4 ounce lime juice, 3\/4 ounce simple syrup and 1 1\/2 ounces rum &#8211; shake it up and finish with a splash of soda &#8211; and voila &#8211; you have an amazing Blackberry Mojito!<\/p>\n<p>Gone blackberry picking and now have a big bowl in the fridge? Throw some in your pancake batter and start the morning off with some <a href=\"http:\/\/kathycasey.com\/blog\/?p=6295\">Blackberry Pancakes topped with Citrusy Syrup<\/a>. Or make a berry\u2019licious summer sundae with strawberry ice cream, lemon curd and fresh blackberries \u2013 yum!<\/p>\n<p><img decoding=\"async\" class=\"size-medium wp-image-7499 aligncenter lazyload\" data-src=\"http:\/\/kathycasey.com\/blog\/wp-content\/uploads\/2020\/08\/Pan-Sized-Berry-Pancakes-with-Zesty-Lemon-Syrup-281x300.jpg\" alt=\"\" width=\"281\" height=\"300\" src=\"data:image\/svg+xml;base64,PHN2ZyB3aWR0aD0iMSIgaGVpZ2h0PSIxIiB4bWxucz0iaHR0cDovL3d3dy53My5vcmcvMjAwMC9zdmciPjwvc3ZnPg==\" style=\"--smush-placeholder-width: 281px; --smush-placeholder-aspect-ratio: 281\/300;\" \/><\/p>\n<p style=\"text-align: center\">Pan-Sized Berry Pancakes with Zesty Lemon Syrup!<\/p>\n<p>Or try my recipe for <b>Blackberry Honey Vinaigrette<\/b>, perfect tossed with local greens and finished with a sprinkling of toasted hazelnuts and goat cheese- a great start to any summer meal.<br \/>\n-Kathy<\/p>\n<p><b>Summer Greens with Blackberry\u2013Honey Vinaigrette, Toasted Hazelnuts &amp; Chevre<\/b><br \/>\nMakes 4 servings<\/p>\n<p>Vinaigrette<br \/>\n1\/4 cup fresh blackberries<br \/>\n2 tablespoons red wine or balsamic vinegar<br \/>\n1 tablespoon local honey<br \/>\n1 teaspoon Dijon mustard<br \/>\n3 tablespoons olive oil<br \/>\nPinch cayenne pepper<br \/>\n1\/4 teaspoon kosher salt<\/p>\n<p>Salad<br \/>\n8 cups mixed summer greens<br \/>\n1\/2 \u2013 3\/4 cup fresh blackberries<br \/>\n1\/4 cup (1 ounce) chopped, toasted hazelnuts<br \/>\n2 ounces ch\u00e8vre-style goat cheese, crumbled<\/p>\n<p>Combine all the vinaigrette ingredients in a blender or food processor and process until smooth. Strain. Refrigerate until needed. The vinaigrette can be made up to 3 days in advance.<\/p>\n<p>To serve the salad: Toss the greens with Blackberry\u2013Honey Vinaigrette and divide among 4 plates. Scatter with berries, hazelnuts, and goat cheese.
