You know &#8211; the eggs, the candies, the marshmallowy Peeps?<\/p>\n<p>Of course there will be egg salad sandwiches for days BUT let&#8217;s get creative with it! How about adding in chopped bacon or some sassy curry. Soak shelled-hard cooked eggs in a sweet &amp; tart beet juice marinade. Then cut and fill. Well I\u2019ve got you covered with my recipe for <strong>Jelly-Bean Rice Crispy Tweeps<\/strong> \u2013 a fun and festive twist on the beloved rice crispy treats. Serve it over ice cream with a few peeps for garnish!<\/p>\n<p>So hop to it and have a Happy Easter! \u2013Kathy<\/p>\n<p><strong>Jelly Bean Rice Crispy Tweeps<\/strong><br \/>\nMakes 30 treats<\/p>\n<p>3 Tbsp. butter<br \/>\n6 packages yellow Peeps\u00ae\u00a0&#8211; 30 peeps (you can use bunnies too for pink treats)<br \/>\n6 cups Rice Krispies\u00ae cereal<br \/>\n1 cup small jellybeans<\/p>\n<p>Pull 30 of the peeps heads off and set aside for garnish.<\/p>\n<p><img decoding=\"async\" class=\"aligncenter wp-image-5813 size-full lazyload\" data-src=\"http:\/\/kathycasey.com\/blog\/wp-content\/uploads\/2016\/03\/peeps2.jpg\" alt=\"peeps\" width=\"240\" height=\"180\" src=\"data:image\/svg+xml;base64,PHN2ZyB3aWR0aD0iMSIgaGVpZ2h0PSIxIiB4bWxucz0iaHR0cDovL3d3dy53My5vcmcvMjAwMC9zdmciPjwvc3ZnPg==\" style=\"--smush-placeholder-width: 240px; --smush-placeholder-aspect-ratio: 240\/180;\" \/><\/p>\n<p>In a large sauce pan heat butter over low heat until melted. Then add peeps and stir over low heat until melted. Then stir in cereal and jellybeans until cereal is well coated and jellybeans are distributed.<\/p>\n<p>Place mixture in a greased 8&#8243;x8&#8243; baking dish. Cover with plastic wrap and press down to compact the crispy treats. Let set for at least 15 minutes before serving. To serve cut (5&#215;6) into 30 squares.<\/p>\n<p>Recipe by Kathy Casey Food Studios\u00ae. \u2013 <a href=\"http:\/\/www.KathyCasey.com\">www.KathyCasey.com<\/a><\/p>\n<p><strong>Bunny\u2019licious Boozy Chocolate Sauce<\/strong><br \/>\nMakes 4 servings<\/p>\n<p>6 oz of left-over chocolate bunnies<br \/>\n1\/4 cup hot, strong brewed coffee<br \/>\n1 Tbsp. liquor such as: Grand Marnier, Canton Ginger Liqueur, Amaretto or Frangelico liqueur (optional)<\/p>\n<p>For drizzling over or dipping in: fresh fruit for dipping cut into chunks, such as: pineapple, strawberries, raspberries, apple wedges and oranges, pound cake chunks, holiday cookies, small chocolate chip cookies, other candy such as Peeps\u00ae<\/p>\n<p>Break up or cut bunnies in small pieces (chocolate chip size)\u00a0into a\u00a0glass or ceramic bowl and pour hot coffee over them. Stir until chocolate is melted and mixture is smooth. If coffee is not hot enough to melt chocolate, then microwave for 10 seconds.
