In years past, moms everywhere couldn&#8217;t bribe their kids to eat these veggies, but today,\u00a0being green is now fun and good for you!<\/p>\n<p>A great example of an old but &#8220;new&#8221; veggie is the gorgeous Lacinato Kale (aka black kale). It&#8217;s a beloved veggie in Italy and traditionally slow cooked into soups. Take for example <a href=\"http:\/\/www.kalettes.com\/\" target=\"_blank\">kalettes<\/a>,\u00a0which are a cross between brussel sprouts and kale or\u00a0<a href=\"https:\/\/en.wikipedia.org\/wiki\/Broccolini\" target=\"_blank\">broccolini<\/a>;\u00a0a hybrid of broccoli and <a href=\"https:\/\/en.wikipedia.org\/wiki\/Kai-lan\" target=\"_blank\">gai lan<\/a>\u00a0(aka Chinese broccoli).<\/p>\n<div class=\"et_pb_slider et_pb_slider_fullwidth_off et_pb_gallery_post_type\">\n\t\t\t\t<div class=\"et_pb_slides\">\n\t\t\t\t\t\n\t\t\t\t<\/div>\n\t\t\t<\/div>\n<p>&nbsp;<\/p>\n<p>And don&#8217;t forget the\u00a0gorgeous Romanesco aka <a href=\"https:\/\/en.wikipedia.org\/wiki\/Broccoflower\" target=\"_blank\">broccoflower<\/a>!\u00a0A lime green vegetable that takes the best of broccoli and cauliflower and marries them together in a blissful union.
